When the jam has reached the consistency you want -- usually 40 minutes does it for me -- take it off the heat and let it cool to room temp.  If you want it smoother, you can put it through a blender or food processor or food mill.  i like mine with a few chunks, so I use an immersion blender.  Freeze for two months, refrigerate for a week.
